What makes Global knives different

A Global knife is lighter than it looks, and the handle is part of the blade. The whole knife is one piece of steel from tip to end. With no join between the handle and the blade, there is nothing to work loose and nowhere for last night's garlic to hide. The dimples along the handle give you grip when your hands are wet, which covers most of your time at the bench.

The steel is CROMOVA 18, a high carbon stainless steel made by Yoshikin for Global knives alone. It is ice tempered and ground to a finer angle than European knives, so the blade slides through a ripe tomato instead of squashing it, and fish holds together instead of tearing. You press down less when cutting, so there's less chance of slipping, creating a safer way to cut.

Performance backed guarantee. Every Global knife carries a lifetime guarantee against defects in materials and workmanship.

Global Classic Knife series

Classic is the original. Plain steel with the dimpled grip, and the one most people picture when they think of Global. Classic is the safest first pick when you're opting for a Global Knife. Have a look at loose Global knives and Global knife block sets.

Global knife block sets: the easy way in. A knife block set sorts you out in one go. You get the knives you reach for most, plus somewhere to keep them other than the cutlery drawer, where good knives get chipped. Browse Global knife block sets or all our knife blocks and sets.

The Global 3 Piece Exclusive Set is the smaller way in. It covers the three jobs you do every night, with a cook's knife for the bulk of the work, a smaller knife for prep and a paring knife for peeling and fiddly bits.

Buying single Global knives

Plenty of blocks hold two knives that get used and four that never leave the slot. Buying the one knife you are missing costs less than replacing five you already own. Most kitchens need three or four knives. Buying one good knife at a time is kinder to the credit card, and you end up with knives you picked yourself.

Which Global knife should you buy first?

A cook's knife. It handles most of the cutting you do in a week. Add a paring knife for the small jobs, then a bread knife so a sourdough crust cuts cleanly instead of tearing. Size wise, 20cm suits most people. Drop to 18cm if your board is small or your hands are. Go to 24cm if you cook for a crowd. After that it depends what you cook. A santoku has a flatter edge and a shorter blade, which suits chopping straight down and getting through a lot of veg. A utility knife covers anything too big for a paring knife and too small for a cook's knife. A carving knife earns its spot if Sunday roast is a regular thing.

Global knife sharpeners, and why you need one

A blunt knife is more dangerous than a sharp one, because you push harder and it slips. Most kitchen cuts happen on knives that stopped being sharp months ago. Global blades hold an edge well, though nothing holds it forever. Run a ceramic or diamond steel over the blade every week or two, which takes about ten seconds. Then give it a proper sharpen once or twice a year on a whetstone or a sharpener built for Japanese blades.

Keep a Global away from pull through sharpeners made for European knives. They grind the edge to the wrong angle and the knife never cuts the same again.

How to look after your Global knives

Hand wash and dry them straight away, and keep them out of the dishwasher no matter how tempting it looks. The heat dulls the edge, and the knife spends the whole cycle knocking into your saucepans like a bad houseguest. Store them in a block or on a magnetic rail rather than loose in a drawer. Cut on wooden or plastic boards. Glass and stone boards look lovely and will wreck an edge inside a week. See chopping boards and blocks and all knives and cutting boards.
