Prawn, Zucchini & Lemon Pasta

Ingredients

Pasta (Pot and Pan)

500g rigatoni

400โ€“500g raw prawns, peeled

2 zucchinis, thinly sliced

400g cup cherry tomatoes, halved

3 tablespoons extra virgin olive oil

1/3 cup white wine

3 garlic cloves, finely chopped

1/2 teaspoon chilli flakes (or fresh chilli)

1 lemon, zest + juice

1/2 teaspoon salt

1/4 teaspoon pepper

Handful fresh basil or parsley


Crispy Capers & Breadcrumbs (Wok)

3 tablespoons extra virgin olive oil

2 tablespoons capers, drained

1/2 cup breadcrumbs

1 garlic clove, finely chopped

Pinch chilli flakes (optional)  

Method

    Heat olive oil over medium heat. Add garlic and chilli flakes and cook for 1 minute until fragrant.โ€ฏAdd prawns and cook until just pink, then remove from the pan and set aside.โ€ฏIn the same pan, add zucchini and cherry tomatoes. Cook for 7-10โ€ฏminutes, or until softened, then pour in your white wine.โ€ฏReturn prawns to the pan, then add lemon zest, lemon juice, salt and pepper.

    Bring a large pot of salted water to the boil and cook your rigatoni until al dente.โ€ฏReserve 1/2 cup pasta water before draining. Add your cooked pasta along with a splash of reserved pasta water and fresh herbs. Toss until glossy and well coated.

    Heat olive oil over medium-high heat in your wok.โ€ฏAdd capers and cook for 1โ€“2 minutes until they begin to crisp.โ€ฏStir in breadcrumbs, garlic and chilli flakes. Cook, tossing continuously, until golden and crunchy.

    Plate your pasta and generously spoon over the crispy capers and breadcrumbs.โ€ฏFinish with extra herbs and a drizzle of olive oil.
