One Pan Salmon & Veggie Bake

Few things rival the satisfaction of a meal that delivers maximum flavour with minimal washing up. This one-pan salmon bake combines perfectly roasted salmon, seasonal vegetables and bright citrus for an effortless dinner that's equally suited to weeknights and entertaining.

Ingredients

•    4 salmon fillets
•    500g baby potatoes, halved
•    2 zucchinis, sliced into ribbons
•    1 red capsicum, sliced
•    1 bunch broccolini
•    1 lemon, sliced
•    2 tbsp extra virgin olive oil
•    1 tbsp Dijon mustard
•    1 garlic clove, finely minced
•    1 tsp honey
•    Sea salt and cracked black pepper
•    Fresh dill, to serve

Preheat oven to 200°C.

Arrange potatoes, capsicum and broccolini in the Scanpan Elektra Roaster Large. Drizzle with olive oil, season generously and toss to coat.

Roast for 20 minutes until the potatoes begin to colour.

Meanwhile, whisk together Dijon mustard, garlic, honey and a splash of olive oil.

Remove the roaster from the oven and nestle the salmon amongst the vegetables. Brush each fillet with the mustard glaze and scatter over the lemon slices and zucchini ribbons.

Return to the oven and roast for a further 12–15 minutes, or until the salmon flakes easily.

Finish with fresh dill, an extra squeeze of lemon and serve directly from the roaster.
