Layered Dumpling Lasagne with Black Garlic Pork & Crispy Chilli Oil

Ingredients

1. Dumpling Lasagne

40-50 fresh dumpling or wonton wrappers

500g pork mince

1 cup finely chopped oyster mushrooms

2 cloves black garlic, mashed into a paste

2 spring onions, finely sliced

1 tbsp fresh coriander stems, minced

1 tsp grated ginger

1 tbsp light soy sauce

2 tsp Shaoxing wine (or dry sherry)

1 tsp sesame oil

½ tsp white pepper

1 tsp cornflour

½ tsp salt

2 tbsp Chicken broth to pour over finished lasagne before cooking

Small bowl of water for dipping wrappers

Extra spring onions and sesame seeds for garnish


2. Homemade Crispy Chilli Oil

½ cup neutral oil

2 tbsp finely chopped garlic

2 tbsp finely chopped shallots

1 tbsp crushed Sichuan peppercorns

2 ½ tbsp chilli flakes

1 tbsp gochutgaru

1 tbsp sesame seeds

½ tsp sugar

½ tsp salt

1 tsp black vinegar

1 tsp soy sauce

    Fill a large pot halfway with water and bring to a gentle boil.

    In a large mixing bowl, combine the lasagne filling ingredients, mince, oyster mushrooms, black garlic, spring onions, fresh coriander, ginger, soy sauce, Shaoxing wine, sesame oil, white pepper, cornflour, salt.

    Mix gently with your hands until everything is combined, set aside.

    Place a small baking dish or induvial ramekins that will fit inside your steaming pot on the bench top.

    Quickly dip dumpling or wonton wrapper in the water, then lay it flat in the bottom of your baking dish, overlapping slightly if needed.

    Spread a thin layer of the pork mixture over the wrappers.

    Repeat, continue layering until you run out of space or ingredients. Finish with a final layer of wrappers.

    Pour the chicken broth over the top to keep everything juicy.

    Carefully transfer the dish to the pot or steamer, cover, and steam for approximately 25 minutes, until the pork is fully cooked and the wrappers are tender and glossy. Cooking time will vary depending on the size and depth of your baking dish.

    While the lasagne cooks, prepare your crispy chilli oil.

    a. Heat oil gently on stove top.

    b. Add garlic and shallots and fry slowly until deeply golden and crisp.

    c. Remove from heat.

    d. In a heatproof bowl combine chilli flakes, gochutgaru, peppercorns, sesame seeds, sugar and salt.

    e. Pou the hot oil and crispy bits over the mixture.

    f. Stir in the vinegar and soy sauce.

    Finish with a generous drizzle of your crispy chilli oil and garnish with spring onions and sesame seeds.
