This pizza dough comes together quickly and is the ideal base for your favorite toppings! This recipemakes a large batch and the finished dough balls freeze well, so you can enjoy making pizza in your Oonipizza oven whenever you’re in the mood. Which, let’s face it—is anytime!
5x 250g dough balls (for 12" pizzas) or 4x 330g dough balls (for 16" pizzas)
17 oz (480 g) warm water
1 tbsp (15 g) active dry yeast
26.5 oz (750 g) bread flour
1 tbsp salt
1 ½ tbsp olive oil
3.5 oz (100 g) rice flour or semolina for dusting
In a small bowl, mix 3 tablespoons of flour into the warm water. Once combined, stir in the yeast until well blended. Allow mixture to bloom in a warm place for about 5 minutes, or once it becomes foamy.
Place half of the remaining flour into a large bowl. Add the yeast mixture and stir well. Add in remaining flour and salt and mix until all ingredients are combined. Sprinkle your work surface with a light dusting of flour and knead the dough for 8 to 10 minutes, or until it is elastic and springs back to the touch.
Grease the bowl with the olive oil and gently roll the dough ball around to cover all sides with oil. Cover the bowl with a kitchen towel or plastic wrap and let rise in a warm spot for 20 to 30 minutes, or until the dough is twice its original size.
Divide the pizza dough into 5 x 250 g or 4 x 330 g dough balls. Shape the dough into round balls using the method found here.
Brush the dough balls with olive oil, cover with a clean kitchen towel and let rise in a warm spot for 15 to 20 minutes, or until the dough is twice its original size.
Preheat your Ooni pizza oven to 500˚C (932˚F). Use the Ooni Infrared Thermometer to check the
temperature inside the oven. While your dough is rising, prepare your favorite pizza toppings.
