Easy Vegan Chocolate Chip Cookies

Makes 15-20 cookies depending on size preference
Ingredients
2 cup self raising flour
1 tsp baking powder
Big pinch of sea salt
1/2 cup brown sugar
2/3 cup pure maple syrup
1 tsp vanilla essence
1/2 cup neutral tasting oil (I used rice bran)
100g chopped dark chocolate/chocolate chips (dairy free)
Method
1 Preheat oven to 170 ‘C fan forced. Line 2 large baking trays with baking paper, set aside.
2 Mix all the dry ingredients (flour, sugar, baking powder and salt) together in a big bowl.
3 Add the maple syrup, oil and vanilla essence and mix well to combine.
4 Add the chopped chocolate and mix well.
5 Using a tablespoon, spoon mixture onto the prepared baking trays, leaving at least 2-3 cm in between each cookie.
6 Bake for 12-15 minute or until golden.(Cooking time will vary depending on the size of biscuit created). Remove from the oven and allow to cool on the trays before transferring to a baking rack or containers.

Notes: You don’t have to buy expensive vegan chocolate. Lindtt range that is 70% cocoa and above is all dairy free. Whittakers too, 50% and above I believe. I’ve made this recipe with both and they are equally as delicious. Coles* also have a super cheap dark chocolate, it comes in a red foil pack and its only $2.50. (*Edit: not sure if this one is still vegan).
The mixture is quite sweet so the addition of the super dark chocolate is a nice balance. You can use milk or white chocolate too, if preferred. Or even all 3, ha!
