Tahini Fudge

Be prepared to be addicted to this moorish, sweet, salty and rich slice. Storing it in the freezer means a piece is only moments away for when that 4pm craving hits! The tahini slice comes together in minutes using only a few everyday pantry ingredients. The crunchy add-ins are the best part and are totally up to you! 

Makes 15-20 squares

Ingredients

1 cup hulled tahini

4 tbsp cocoa powder

4 tbsp coconut oil, melted

4 tbsp rice malt syrup ½ tsp vanilla extract

Large pinch of salt

A few big handfuls of add ins (*see notes)

Method

1.
Prepare a small baking tray by lining it with baking paper. Ensure the bottom and the sides are all covered.

2.
Use your Bamix on a medium setting to mix all the ingredients into a large bowl, taste and add salt to your desired liking.

3.
Add in your mix-ins, leaving a handful for the toppings.

4.
Place in freezer for at least one hour until firm enough to slice.

5.
Remove from baking tray and slice into squares using a sharp knife. Place into a container and pop back into the freezer. Slice will store in the freezer for up to one month.

Notes

For the add-ins, you can use any dried fruit, nuts, coconut flake or crunchy things your heart desires. Coconut flakes, cocoa nibs and flaked almonds are a few favourites. Rice bubbles make a lovely crunchy addition and hazelnuts add a nutella-esque vibe to the slice. Alternatively, leave it plain for a smooth and rich chocolatey tahini hit!
