Here is Minimax's favourite pumpkin soup recipe—a simple and delicious version that can be easily prepared using a Bamix Immersion Blender.

Ingredients
1 small pumpkin (around 1-1.5 kgs), peeled, seeded, and cubed
1 medium onion, chopped
2 cloves of garlic, minced
4 cups vegetable or chicken broth
1 cup coconut milk
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Salt and pepper to taste
Optional toppings: roasted pumpkin seeds, a drizzle of coconut milk, fresh herbs
Method
Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until softened and fragrant, about 5 minutes.
Add the cubed pumpkin to the pot, along with the ground cumin, ground cinnamon, salt, and pepper. Stir well to coat the pumpkin in the spices and cook for another 2-3 minutes.
Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the pumpkin is tender and easily mashed with a fork.
Turn off the heat and let the soup cool slightly. Using a stick blender, carefully blend the soup until smooth and creamy.
Place the pot back on the stove over low heat and stir in the coconut milk. Cook for another 5 minutes, stirring occasionally, until the soup is heated through.
Taste and adjust the seasoning if needed. If the soup is too thick, you can add a little more broth or coconut milk to achieve the desired consistency.
Ladle the pumpkin soup into bowls and garnish with your preferred toppings, such as roasted pumpkin seeds, a drizzle of coconut milk, or fresh herbs.
Serve hot and enjoy!

• I easily and quickly whip fluffy, light cream in a jug for my homemade scones and cakes.
• I even use it to break down the mince in my pan for my spaghetti bolognaise to have a more even consistency if it’s a little lumpy.
• I would also highly recommend the Wet and Dry Mill – it’s fantastic for whipping up a dip without all the extra nasties or making your own breadcrumbs.

I have only ever owned a Bamix but I would never switch to anything else!
