
A simple creamy vanilla ice-cream studded with bursts of Christmas flavours, from juicy glace
cherries to warming cinnamon. An easy and versatile recipe to add to your Christmas
celebration menu - it’s sure to be a real crowd pleaser.
Recipe
300 ml thickened cream
300 ml milk
1 vanilla bean, split
6 egg yolks
175g caster sugar
½ cup dried cranberries
¼ cup glace cherries, chopped
½ cup shelled pistachios, chopped
¼ cup cacao nibs
2 tsp cinnamon, ground

Method
1.
Place the cream and milk in a saucepan. Scrape in the vanilla seeds and add the bean, too. Bring to the boil, then turn off the heat and set aside for 10 minutes to infuse. Remove the vanilla pod.

Place the egg yolks and sugar in the bowl of an electric mixer (KitchenAid). Beat until pale. Carefully pour the milk over, then return to a clean saucepan.

Cook over low heat, stirring, for about five minutes until it is slightly thickened.

Set aside to cool, then refrigerate.

Place the custard in the KitchenAid Ice-cream attachment and mix on low-medium speed until thickened.
6.
Transfer to a bowl or container and stir through the glace cherries, cranberries, pistachios, cacao nibs and cinnamon. Return to freezer to firm up. Scoop and serve.
Notes
- If you don’t have time to make the ice-cream from scratch. A store bought vanilla ice-cream will work just fine with all the add-ins mixed through.
