With a little preparation the night before, you’ll have yourself a tasty and nutritious breakfast to start your day right! Chewy, crunchy & creamy - this classic bircher with a modern chia seed twist will become your new breakfast staple! 

Makes 2-3 serves

Ingredients
1 cup oats
3/4 cup apple or orange juice
2 tbsp dried fruit
2 tbsp nuts/seeds
2 tbsp natural yoghurt
1 tbsp chia seeds
1 apple, grated
1 tbsp honey, optional
Fruit of choice, for topping
Handful of seeds, for topping
Yoghurt, for topping 

Method
1.
Mix the oats, juice, dried fruit, nuts, yoghurt and chia seeds in a large bowl. Cover and leave to soak overnight.

2.
In the morning, add the grated apple and mix to combine.

3.
Divide into bowls and top with fruit, yoghurt and seeds.

4.
Bircher will last in the fridge for up to 3 days.

Notes
Use this recipe as more of a guide than a strict rulebook. You can choose your dried fruit of choice, pick your nuts and seeds and top what whatever fruit you desire or is in season.

Make a big batch at the start of the week - easy breakfasts come morning time!

If you don’t have any juice, regular milk or nut milk will do. Even water is fine! If you find the mixture is too thick in the morning, add a little extra liquid or yoghurt to mix through.
